The Baking Technology Toolkit is a collection of software tools for the baking industry. They contain useful techniques, equations and methods used in bakeries.
The first two tools are:
- Mixing Tool – This contains calculators for heat rise, water temperature and energy used during mixing. Controlling dough temperature is the foundation of process and product quality control and as such is vitally important to consistent production. The mixing tool is comprised of the following components:
- Raising Agents Tool - This tool gives you information on the most common raising agents (carbonates and acids) used in a baked product. It allows you to balance the carbonates and acids in your recipe, gives information on the amounts and types of raising agents for specific products, and provides general information on the most common chemicals used as raising agents in baking.
In addition, this tool can be used to provide a theoretical estimate of the amount of gas produced in a standard dough/batter for given combinations of aerating agents.
