Raising Agent Tool in detail
By entering values for the carbonates, bicarbonates and acids used in a recipe, the calculator will balance their values to achieve neutrality. By selecting a product type from the drop down list, product specific information relating to leavening or raising agents can be considered. The balancing can be done with either the carbonates or the acids as the base point. A neutralizing value can be obtained and information about the different types of acids and carbonates can be reviewed.
Once the raising agents are balanced, gas information (in tabular and graphical form) can be displayed showing the theoretical gas volume released over a time period. |
